David Heimer, head chef at Zurich's trendy restaurant Josef, suffered a paragliding accident in Spain in May 2023. He burned 70 percent of his skin. All of his fingers had to be amputated. I accompanied David Heimer for a year as a journalist. It must have pushed both him and us to our limits.
