Recognized as an exceptional chef, having been awarded three Michelin stars three times and two Gault et Millau 20/20 awards, the Michelin Guide decided to strip him of his third star on Sunday, January 20, 2019.

Né en 1978 à Genève, Fred Merz est diplômé de l'Ecole de Photographie de Vevey en 2001. Il co-fonde en 2015 l’agence photographique suisse: Lundi13. Sollicité par la presse suisse et internationale pour son travail de portraitiste, Fred revendique un regard esthétique sur le monde, un monde qu’il met en scène grâce à une multitude d’éclairages spécifiques, au rendu proche de compositions cinématographiques. Ces dernières années, Fred Merz a été appelé à retranscrire et faire évoluer cette démarche artistique, tout en développant conjointement de nouveaux concepts de communication pour diverses institutions et plus particulièrement pour de grandes manufactures horlogères suisses. En parallèle à ses mandats corporate, Fred collabore à de nombreux projets d’envergure internationale dont l’aventure pionnière de Solar Impulse, effectuée en 2015-2016. Actuellement, il couvre l’aventure SolarStratos. Faire voler un avion solaire dans la stratosphère, à plus de 25’000 m.
