What's so special about Alpine cheese? I spent a summer visiting all eleven Nidwalden Alpine cheese dairies, discussing cheesemaking with the Alpine farmers, and tasting dozens of cheeses. This resulted in a journey through Alpine cheese, in which all the cheesemakers have their say. In addition, "Maître Fromager" Rolf Beeler, as a neutral authority, evaluates one Alpine cheese from each of the eleven Alpine cheese dairies in a blind tasting.
