The Klettgau region in Schaffhausen is a classic wine producing area. One trend is wines created by spontaneous fermentation. Markus Ruch, a winegrower from Neunkirch, swears by it. He forgoes extensive wine-making techniques, chemical fertilizers and filtration, and instead relies on naturally occurring yeasts. The resulting “natural wines” surprise with unusual flavour and scent profiles. Markus Ruch’s hands betray that it’s grape harvest season, on 28th October 2017.
