In his tiny cheese dairy, Willi Schmid from Lichtensteig produces cheese that is among the finest in the world. He knows every plant in the region, every cow that provides him with milk. And when he tastes the milk, he knows exactly what the cow has eaten. Perfection and intuition: he produces his cheese with great sensitivity and automatically does everything right, even though so much can go wrong during cheesemaking. His deep connection and universal understanding of nature are the keys to his success. And humility – with his work, he bows daily to what nature gives him.
